Can you believe that 2016 is almost over?! To celebrate this wonderful, wacky, and at times quite horrific year we’ve developed some cocktail recipes for you to ring in the New Year with.
This is a take on a French 75, the only difference between a Classic French 75 and our take is the Lavender Honey Simple Syrup. You could also replace this with a Honey Simple Syrup or a regular sugar-based simple syrup, the same instructions will apply.

Lavender Honey Simple Syrup
2 TBSP Lavender Honey
2 TBSP Water
1 1/2 oz Cognac ( we used Courvoisier VS )
1 oz lemon juice
1/2 oz lavender honey simple syrup
2 oz dry sparkling wine ( we used Henkell Trocken )
A pinch of lavender flowers
Combine 1 part lavender honey and one part water in a small saucepan and stir over low heat until the honey has dissolved into the water; set the mixture aside in the fridge to chill. Following the tips from the Ginger Kombucha Mule Recipe, create a few lemon twists for garnishing later; since this drink is served in a champagne glass, you may want to make narrower twists for the garnish.
Juice the lemon into a separate container and measure out 1 oz of the juice using a jigger into a cocktail shaker with ice. Next, measure out 1 1/2 oz of cognac and 1/2 oz of the lavender honey syrup into the cocktail shaker. Shake the cocktail shaker for a few seconds to cool down the mixture, then pour into a champagne glass.
Top up the glass with sparkling wine, and add a pinch of lavender flowers and a lemon twist for garnish.
