These crispy, cheesy Garlic Parmesan Potato Stacks are so incredibly delicious and easy to make, I just know that you’re going to love them! This recipe is inspired by a dish we had at The Royal Hotel in Picton called Potato Pavé which is a stack of thinly sliced potatoes that have been cooked together and it becomes a crispy, layered potato brick. It’s so incredibly delicious but very labour intensive, so these Garlic Parmesan Potato Stacks are much easier to make and are crispy, cheesy, garlicky potato perfection.

These potatoes get infused with garlic butter and they cook and are stacked with layers of freshly grated parmesan cheese to give a perfectly salty, cheesy bite. Serve these potatoes with roasted chicken, sausages, or anything your heart desires! You can even make them for Brunch with some poached eggs or an omelet, my stomach is rumbling just thinking about it!

How to make Garlic Parmesan Potato Stacks:

The key to these potatoes is slicing the potatoes super thin so they get really crispy in the oven. A mandoline is really best for this recipe, so if you have one, use it! If not, you’ll need to very thinly slice each potato using a knife. It’s doable for sure, but the mandoline makes cutting the potatoes into thin even slices very easy!

Now, thinly slice each potato into almost paper-thin slices. Honestly, the thinner you can go the better! Cutting the potatoes into thin slices allows the edges to become perfectly crisp, almost potato chip-like, which is so freaking delicious.

Once I have the potatoes sliced, I like to melt together the butter and garlic in a small sauce pot on the stove. I found this to take away any intense raw garlic flavor and instead leave you with just the right garlicky flavour.

Now, add the potatoes to a bowl and pour the butter-garlic mixture over top. Toss well to ensure each potato slice is evenly coated with the garlicky buttery parmesan mixture.

Layer the sweet potatoes into a stack in a standard muffin/cupcake pan. Fill each cup to the very top to get a nice, tall stack. It might seem like a lot, but the stacks shrink down as they bake.

As the stacks bake away in the oven, the kitchen will smell incredible, buttery, and garlicky perfection! These stacks are delicious with their crispy chip-like edges and sweet, soft center! Once you take these golden potato stacks out of the oven, give them a sprinkle of sea salt and you’ll be in potato heaven!

Garlic Parmesan Potato Stacks

Ingredients
1/2 cup butter
2 cloves garlic, minced
1/2 cup grated parmesan cheese
12-14 baby or small yellow skin potatoes, sliced into 1/8 inch slices
1 teaspoon sea salt
1/2 teaspoon pepper
Garlic Aioli for dipping
1/2 cup mayonnaise
1 clove garlic, grated
1 tablespoon lemon juice

Instructions:
1. Preheat oven to 400ºF.
2. Cut the potatoes using a Mandoline, food processor slicing blade or very sharp knife into 1/8 inch thin slices. Add the potatoes to a bowl.
3. Melt the butter in a small pot over medium-low heat with the garlic. Let cook for 3-4 minutes or until the garlic is fragrant.
4. Pour the butter mixture over the potatoes and add the grated parmesan. Toss to combine so that all the potato slices are coated in the butter and parmesan.
5. Stack the potatoes in the muffin cups. Transfer to the oven and bake for 40-45 minutes or until the edges and tops are golden brown.
6. To make the garlic aioli, stir together the mayonnaise, garlic, and lemon juice.
7. Garnish with the potatoes with sliced green onions and extra grated parmesan cheese. Serve these crispy potatoes with the garlic aioli and enjoy!
