This is one of my favourite pasta recipes right now, it’s garlicky, creamy, full of veggies, and it’s absolutely delicious. I know you are going to absolutely love this Creamy Spinach Artichoke Pasta because it’s quick, easy, and super yummy. This simple Creamy Spinach Artichoke Pasta is the perfect winter dinner. Quick, easy, hearty, and so delicious! Rigatoni gets tossed in a creamy sun-dried tomato, artichoke, and spinach sauce. This is truly one of those dinners that everyone at the table will love. Great for a weeknight, but equally fancy enough to serve up at your next dinner party. You can’t go wrong with this Tuscan-style pasta.

I’m not always up for pasta to be honest, but pasta recipes are always in the top recipes on the blog and I know that it’s an easy meal that everyone will love. I mean, just ask my father-in-law, I think he’d eat noodles every night if he could! Pasta is just a comforting, hearty meal so I know why you all love it! This creamy pasta is packed full of Italian flavours and it’s creamy but not too rich and heavy, so it’s a great staple recipe.

A few tweaks you can make to this recipe to change it up:

  • add protein: cubed chicken or shrimp or chickpeas would be delicious, cook your protein first, with your onions, garlic, and olive oil then add in your artichoke hearts and continue on with the recipe

  • make it gluten-free: use gluten-free pasta, any shape will do, but rotini would be perfect for getting coated in sauce

  • don’t have spinach? use kale!

How to make Creamy Spinach and Artichoke Pasta:

Let’s be honest, one of the best things about pasta is how easy it is to make and this recipe is no different!

Start with your pasta, get your water boiling and toss in your pasta into the boiling and salted water. Let that cook until al dente. Before draining the pasta, save 1 cup of the pasta cooking water to thin your sauce out later on. Honestly, whenever you’re making pasta always save the pasta water, you never know when you need to make your sauce a bit saucier, y’know?!

Meanwhile, let’s make this creamy dreamy sauce. Simply sautee your onions and garlic in a bit of olive oil over medium heat. Add in your chopped artichoke hearts, chopped sundried tomatoes, chili flakes, and cream cheese. Stir that all together and let it cook until the cream cheese is melted into the veggies.

Add in your spinach and 1/2 cup of pasta water and stir to combine. Let your spinach wilt down and then toss in your pasta. Stir everything all together and if need be add more pasta water to loosen the sauce. Add a squeeze of lemon juice to brighten the whole sauce up, and season with salt and pepper. Serve your pasta up with lots of grated parmesan and enjoy!

Creamy Spinach Artichoke Pasta

Servings: 6-8

Ingredients
1 tablespoon olive oil
1 onion, thinly sliced
2 cloves garlic, thinly sliced
1/4-1/2 teaspoon chili flakes
2 cups chopped artichoke hearts
1/2 cup sundried tomatoes, chopped
4 cups spinach
1/2 cup garlic and herb cream cheese
1 tablespoon lemon juice
grated parmesan cheese

Instructions:
1. Bring a pot of salted water to a boil, add pasta and cook according to package directions. Reserve 1 cup of pasta cooking water before draining the pasta.
2. Meanwhile, add olive oil to a skillet over medium heat. Add in the sliced onions and cook until softened and beginning to brown.
3. Add in the garlic, chili flakes, artichoke hearts and sundried tomatoes. Cook for 3-4 minutes.
4. Stir in the cream cheese until melted. Add in 1/2 cup pasta cooking water.
5. Wilt in the spinach into the sauce. Add the drained pasta and lemon juice into the artichoke, spinach sauce. Add more pasta water if necessary.
6. Serve with lots of grated parmesan. Enjoy!
