It’s definitely stew season. The snow is falling as I look out the window, the wind is gusting and our fireplace is roaring, if those aren’t signs that it’s stew season, I don’t know what is! Let’s keep it cozy Spicy Sausage and White Bean Stew. Spicy sausages are braised with tomatoes, carrots, onions and garlic. Serve over a bed of creamy mashed potatoes, polenta, or buttered noodles and you’ll have the perfect dinner for a cold night in. An easy, hands-off dinner that’s so delicious…the perfect cozy winter meal!

I love that this recipe is made in one pot, you can also make this in the slow cooker. The sausages stay super moist thanks to them being cooked in a tomato stew. You can add extra veggies into this stew, like chopped kale which is a delicious addition. This spicy sausage and white bean stew dinner is a hearty and delicious meal to come home to at the end of a busy day. It’s also completely wonderful the next day as leftovers. And the best part? How to make Spicy Sausage and White Bean Stew:

This cozy Spicy Sausage and White Bean Stew is easy, healthy, and delicious, let’s make it!

Start with some oil in a heavy-bottom pot, like a dutch oven. Sautee your onions and garlic until they are starting to become translucent. Once your onions and garlic are fragrant, add in your sliced carrots and canned tomatoes. The key here is to either break up the tomatoes with the back of your spoon or as you’re adding the tomatoes carefully crush them in your hands.

At this point, you’ll add your stock. You can use chicken stock or vegetable stock! Then add in your whole sausages and herbs. Cover your pot, bring the stew to a simmer and let cook for 30 minutes.

Remove the lid, take the herb stems out of the stew, and stir in your can of white cannellini beans.

I like to remove the sausages from the stew and slice the sausages before serving.

Serve your stew over a fluffy, delicious pile of mashed potatoes or mashed cauliflower, or serve with a beautiful baguette.

Spicy Sausage and Bean Stew

Servings: 4-6

Ingredients
1 tablespoon olive oil
1 cup diced onion
4 cloves garlic, minced
2 cups carrots, sliced
1 398mL can of whole peeled tomatoes
6 sprigs thyme
1/4 teaspoon chili flakes
1 tablespoon dried Italian herbs
4 spicy Italian sausages
1 cup chicken or vegetable stock
1 540mL can white cannellini beans, drained and rinsed
1/2 teaspoon each salt and pepper
1/2 cup chopped parsley, for garnish

Instructions:
1. Add olive oil to a dutch oven over medium heat. Stir in the diced onions and garlic and cook for 5 minutes or until translucent and fragrant.
2. Add in the sliced carrots, herbs, and chili flakes. Stir in the canned tomatoes and break the tomatoes up with the back of a spoon.
3. Stir in the stock and gently drop in the sausages. Cover and bring to a simmer. Cook for 30.
4. Stir in the beans, cover, and cook for an additional 15 minutes. Season with salt and pepper to taste.
5. Remove the sausages from the stew and slice them. Serve the stew and sausages over mashed potatoes, mashed cauliflower, or with a baguette. Garnish with lots of fresh parsley.
