The Sunday Edition: July 10, 2022

Happy July Friend and thanks for joining me for another Sunday Edition! I took a little hiatus for the last few weeks from writing this post because there wasn’t a lot to update you on and we were just really busy and I was feeling a bit overwhelmed and burnt out.

Anywho, there are so many updates to share with you now, a month full of updates in fact! First off, we have a new niece and I am so in love with her. I was lucky enough to meet her the day she was born and have a visit when she and my sister and brother-in-law came home from the hospital. She is the cutest little button and I’m completely obsessed.

Second, our renovations have begun! It’s been a long time coming, but the amount of work that has happened in just two weeks blows my mind! Almost all the demo is done and next week the steel beams will go in and our main will be almost entirely open-concept. You can see some progress photos below.

Questions of the week

Q: what are you most excited about for your renovation?

A: Our new kitchen, I just can’t wait for a light and bright kitchen with a more useful, efficient use of space.

Q: which of your recipes do you use the most?

A: definitely my paleo pizza crust and lately I’ve made my easy steak tacos a lot with different meats like ground beef and chicken.

Q: best substitute for wine in recipes?

A: For white wine, I use white wine vinegar mixed with water or stock (for one cup of wine, 1/4 cup white wine vinegar, 3/4 cup water/stock). For red wine, I do a 50/50 mix of cranberry or pomegranate juice and water or balsamic vinegar mixed with water (1 part vinegar and 3 parts water/stock, same as above).

Q: do you want to have kids?

A: Yes, without a shadow of a doubt, just not yet. We just got married last year and we’re about to undergo a huge renovation, so now is not the best time to be pregnant, lol! Maybe next year?! ;)

Q: best book you’ve read this year?

A: We Are Not Like Them by Christine Pride and Jo Piazza was incredible.
