The Sunday Edition: May 15th, 2022

I think Mother Nature heard my wish from a couple of weeks ago about wanting warmer weather and more sunshine. Holy moly, here in Prince Edward County this week, we had multiple 20ºC days with all the sunshine. Our garden is bursting forth and it makes me feel absolutely full of gratitude for our flowers, the birds chirping, and this place, we call home. I’m sitting on my back deck at the table Topher and I built a couple of summers ago writing this week’s Sunday edition and sipping on an Iced Latte. It’s heaven!

Last week was my birthday and we spent Sunday and Monday in Elora. We stayed at The Elora Mill which was so lovely. Our room had a big patio, which was perfect for reading in the sunshine. We walked the Elora Gorge, went to the Aberfoyle Antique Market and bought some beautiful pieces and went shopping in Elora and bought some vintage finds. We stopped at a couple of garden centres and bought specialty rose bushes and a magnolia tree. If you saw my Instagram story on Monday, you’ll know that I love magnolias and it’s always been a dream of mine to have a magnolia tree, so my dream came true this weekend!! It was honestly such a blissful weekend and this week has just flown on by.

Questions of the week

Q: do you have any morning and evening routines?

A: in the morning, I wake up between 7-7:30, seven days a week. I’ve been trying to have some water before coffee lately. As I’m chugging water, I turn on our espresso machine. I make an americano and add a big splash of Silk Oat and Almond Creamer, I’ve been loving it! Then, I come outside and read for a while, like 30-60 minutes. Once I can’t focus anymore I get ready for the day. I try to avoid looking at my phone until 8:30/9am.

As for the evening, my phone locks all my social media apps at 9pm. I tend to watch a show and then wash my face, brush my teeth, and get ready for bed around 10. I read in bed for 30 minutes and then lights off. I charge my phone in the kitchen to avoid any temptation of looking at it early in the morning or late at night. We are seriously not night owls, in fact, I feel like a grandma trapped in a young person’s body LOL!

Q: best way to use peas and asparagus?

A: blanching peas until they’re bright green and blending them into dips is amazing or make a pea salad with feta cheese, fresh herbs, and green onions, YUM! Asparagus is the best when grilled in my humble opinion, toss it in a bit of oil, salt, pepper, and garlic powder and then grill it up. Squeeze a bit of lemon on it when it’s finished cooking and it’s HEAVEN :)

Q: how to jazz up roasted veggies?

A: add a sauce. I’ve been obsessed with tahini sauce lately. Whisk together 1/4 cup tahini, 1 minced garlic clove, juice of 1/2 lemon, and a splash of water to thin it out. It’s soooo good.

Q: what’s difference between all the types of eggs, it’s so confusing?

A: it’s so confusing right?!

Regular ol’ eggs are from chickens that live in a barn and don’t get to roam.

Free run eggs are from chickens that get to roam inside a barn.

Free range eggs are from chickens that get to roam inside and outside.

Omega-3 eggs are from chickens that are fed an omega-3 enriched feed. (this doesn’t mean anything about where they roam)

Organic eggs are from chickens that are fed organic feed, again doesn’t impact where they roam.

I tend to buy free range eggs because I find they taste better.

Q: does photography come naturally to you? what’s your favourite photo you’ve ever taken?

A: absolutely not, it’s a work in progress every day. i’m always playing with light and angles. I’ve taken photography courses which have helped and I study other food photos that I love and figure out what I love about them. My favourite photo is from the Kitchen Sink Cookies recipe and blog post. I just really love the textures and composition.
